Veggie Burrito Bowl
One of my guilty pleasure take out items has always been a Chipotle Vegetarian Burrito Bowl. It’s a semi-healthy option when it comes to quick, cheap and fresh take out, and always satisfies my hungry belly. I’m surprised Gabe and I have never made these at home, because it’s actually really easy. The longest part is waiting for the rice to cook, but if you wanted to, you could prepare the rice ahead of time. This dish has a ton of flavor, especially the cilantro lime rice. I’m looking forward to making it again and switching up the veggies and toppings. It’s a versatile dish that can be adapted to your own preferences.

Veggie Burrito Bowl

Ingredients
Cilantro Lime Rice
1 1/2 cup uncooked brown rice
1/2 cup fresh cilantro
Zest and juice of one lime
1 tablespoon extra-virgin olive oil
3 cloves fresh garlic, minced
1/4 teaspoon sea salt
Burrito Filling
1 15 ounce can black beans
1 bell pepper, sliced
1 yellow onion, sliced
2 cups frozen corn
1 cup monterey jack cheese, shredded
6 green onions, thinly sliced
Guacamole and fresh cilantro for garnish (optional)
Instructions
Rice
Prepare rice according to package instructions. While rice is cooking, prepare the cilantro lime dressing for the rice. Place cilantro, lime zest, lime juice, oil, garlic and salt into a food processor or blender and blend until smooth. When rice is finished cooking, combine with cilantro lime dressing.
Filling
Heat black beans over medium-low heat until hot. Saute bell peppers and onions in a pan over medium to medium high heat, with a touch of olive oil, salt and pepper just until slightly tender. Put peppers and onion aside and saute corn with a little olive oil, salt and pepper, in the same pan for a few minutes until warmed through.
